Summer Camp Day 10 - 3 Recipes :-)

Day 10 – Share your favorite recipe (or two) (see! You CAN be a food blogger!)

 
Woohoo! Who'd have thought that I'd ever be a food blogger!

This is one of my favorites. I got the recipe from a friend at my bridal shower. We really like it..it is so easy too!

Chicken Tortilla Recipe

 
Preparation time: 15 minutes
Cooking time: 1 hour

 
Ingredients:
  • 1 Package Foster Farms Grilled Chicken Breast Strips (they are pre-cooked and packaged in a bag) - Cubed
  • 2 cups sour cream (regular or nonfat)
  • 2 cups Mexican-style shredded cheese blend
  • 1/2 cup mild, medium or hot salsa - drained
  • 1 can 4-ounce chopped green chilies
  • 1/4 teaspoon ground black pepper (optional)
  • 6 10-inch flour tortillas, cut into 2 inch pieces (or you can tear them into small pieces)
  • 2 tablespoons chopped fresh cilantro (optional)

Directions:
  1. Preheat oven to 350 degrees.
  2. In a large bowl add cubed chicken, sour cream, 1&1/4 cups of the shredded cheese, drained salsa, green chilies and pepper. Mix well and set aside.
  3.  Coat bottom of a large Baking Dish (11" x 7" or whatever you have; The size of the dish may determine whether your Casserole has two layers or three layers; No big deal.) with non-stick cooking spray.
  4. Arrange tortilla pieces in the bottom of baking dish, overlapping the pieces to cover the surface. Top with half of the chicken mixture and smooth over with the back of a spoon to even the top. Layer remaining tortillas over top and spoon over remaining chicken mixture. Cover with the remaining Mexican-style cheese and chopped cilantro.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for 30 more minutes, or until top is golden and bubbly. Let stand for 5 minutes before serving.

This is one of my go to appetizer recipes. Again super easy. (I suspect that is my claim to fame when it comes to eating.)

Spinach Pinwheels

Ingredients:
  • 1 (8 oz) can of refrigerated crescent rolls (you know, the pop out of a can kind)
  • 1 tub of garlic herb spreadable cheese
  • 1 package of deli ham or turkey (you won't use the whole package)
  • spinach leaves
Directions:
  1. Heat oven to 350 degrees. Separate the dough into 4 rectangles. Press on the perforations to seal them.
  2. Spread the garlic herb cheese on the dough, top with the meat and spinach leaves.
  3. Roll up each rectangle and pinch to seal.
  4. Cut the roll into slices (approximately 6 slices per roll)
  5. Place on an ungreased cookie sheet and back for 12-18 minutes.
Lastly, here is an easy desert. A great thing to make the day before serving--I am often asked to take this to school when we have potlucks. :-)

Eclair Dessert

Ingredients:

For Eclair:
  • 1 pound box of honey graham crackers
  • 2 small boxes of vanilla instant pudding (you can also use banana)
  • 3 cups of whole mild
  • 8 oz tub of cool whip
For Frosting:
  • 2 squares unsweetened chocolate
  • 3 tbsp melted butter
  • 2 tbsp light corn syrup
  • 3 tbsp milk
  • 1 1/2 cups of sifted powdered sugar
Directions:
  1. Line the bottom of a 9 x 13 pan with a layer of whole graham crackers.
  2. Mix pudding with milk. Fold in cool whip. Pour half of the mixture over the cracker layer.
  3. Add another layer of graham crackers and top with remaining pudding mixture.
  4. Top with a layer of graham crackers.
  5. Spread frosting** over the top layer of graham crackers.
  6. Refrigerate at least 12 hours.
**For frosting: Melt chocolate squares. Add butter, corn syrup, milk, and powdered sugar. Whisk together until smooth.
